DIY Pickles

You can make your very own pickled vegetables for a fresher taste. Using just a few ingredients you can create Ice Box Pickles in a variety of flavors. All you need for your DIY Pickles are cucumbers, vinegar, sugar, and a seasoning packet from Herbs for Healthful Living. You can find many of Herbs for Healthful Living’s pickling spices in the gourmet foods section of our store. Be sure to pick some up along with some cucumbers from the produce department and give the following recipe a try!
Recipe:

Ingredients:
1 gallon air tight container
6 cups Pickling Cucumbers
1 cups sliced white onion
3 cups warm white vinegar
3 cups white sugar
1 packet Herbs for Healthful Living Seasoning Packet
Instructions:
Thinly slice 6 cups of cucumbers. Pickling cucumbers work best. Slice onion into thin rounds then cut in half. Mix the brine by combining warm vinegar, sugar, and seasoning packet in a bowl or pitcher. Whisk briskly to combine. To assemble your pickling jar, layer pickles and onions in an alternating pattern. Pour liquid brine over the vegetables. If the brine doesn’t quite reach the top of your veggie mix, you can add up to 1 cup of water without sacrificing flavor. Give your container a good shake and place it in the refrigerator for 24-48 hours. The pickles will be more flavorful the longer you leave them in the fridge.
Herbs for Healthful Living produces many herb mixes but three of our favorites for DIY Pickles are bread and butter, dill, and hot pickles! Bread and butter and dill work great with pickling cucumbers. If you like spice and are feeling adventurous try the hot pickle mix with cauliflower and carrots. Follow the same recipe as above by replacing the cucumbers with 3 cups chopped cauliflower and 3 cups chopped carrots.
