A Full Day with Wind and Willow

Wind and Willow is a dry mix brand for soups, cheesecake, dip mixes, and cheeseball mixes. The products are so versatile and come in so many delicious flavors we just had to dive in a do a full day worth of recipes using Wind and Willow products! From breakfast to dinner, and everything in between, the recipes are sure to satisfy!

Breakfast: Princess Pancakes

For any prince or princess in your life, this recipe will make your morning. Combining the tangy sweetness of fresh berries with the creamy goodness of berry cream cheese spread, this breakfast is absolutely perfect.

Wind and Willow Princess Pancakes

Princess Pancakes:
1 Triple Berry Twist Cheeseball & Dessert Mix
8 oz cream cheese
4 Tbsp butter, softened
1 pint fresh strawberries, blueberries, and/or raspberries
1 dozen mini pancakes

Combine Triple Berry Twist Mix with cream cheese and butter. Place one dollar-size package or waffle on serving plate, spread with Triple Berry Mixture. Add another pancake and repeat. Create as many layers as you want Drizzle with syrup and garnish with fresh berries and whipped cream.

Lunch: Chili Cheese Nachos

Chili Cheese Nachos

1 Soutwest Queso Hot Dip Mix
8 oz cream cheese
1/2 cup sour cream
1/2 lb. ground beef or turkey, cooked and drained
1 1/2 cups shredded cheddar cheese
1 bag tortilla chips

In a medium pot, prepare Chili Cheese Hot Dip Mix as directed. Stir in ground meat until well combined. Pour mixture over chips and top with shredded cheese. Serve warm!

Add you favorite toppings like lettuce, tomato, avocado, and jalapenos!

Snack: BLT Sandwich Bites

BLT Sandwich Bites

1 BLT Cheeseball & Appetizer Mix
8 oz cream cheese
2 cucumbers, slides
1 lb bacon, cooked and cut into pieces

1. Combine BLT Mix with cream cheese as directed on the box. Mix until smooth.
2. Top each cucumber slice with some of the prepared BLT cheeseball, sprinkle with topping packet. Finish with a piece of bacon on top.

Dinner: Lemon Rosemary Chicken

Lemon Rosemary Chicken

1 Lemon Cheesecake Cheeseball & Dessert Mix
2 lbs skin-on, bone-in chicken (thighs or drumsticks preferred)
1 cup chicken broth
2 Tbsp minced garlic
2 Tbsp butter
8 sprigs of fresh rosemary, 2 Tbsp if using dried
1 lb fingerling potatoes
1 lemon, halved
salt and pepper to taste

Preheat the oven to 400 degrees. Set the chicken, skin side up, potatoes, and lemon halve in a prepped baking dish. Try to keep the chicken from touching so the meat cooks more evenly. Put the small potatoes into the spaces between the chicken. Sprinkle liberally with salt and pepper.

Pull the leaves off the rosemary sprigs and into a medium sauce pan. Add Lemon Cheeseball Mix, chicken broth, garlic, and butter to the pot. Heat mixture over medium low heat. Allow the butter to melt and stir until combined. Let the sauce reach a gentle boil then reduce to a simmer for 3 minutes.

Sprinkle chicken and potatoes with included Topping packet. Pout rosemary mixture into baking dish. Cook for 50 minutes or until the internal temperature has reached 165 degrees.

Dessert: No Bake Peanut Butter Chocolate Chip Pie

No Bake Peanut Butter Chocolate Chip Pie

1 Chocolate Chip Cheeseball & Dessert Mix
8 oz cream cheese
1/2 cup peanut butter
8 oz whipped topping
1 prepared graham cracker pie crust

Combine cream cheese and peanut butter and mix until creamy. Stir in Chocolate Chip Mix until blended. Fold in whipped topping. Spoon into piecrust and top with Chocolate Crunch Topping. Refrigerate until ready to serve.

There you have it! A full day worth of meals all made using Wind and Willow products! I don’t know about you, but I’m starving after writing this all up!
